Passover is the perfect time for delicious food, but finding gluten free options can be tricky. This Kosher for Passover, Gluten-Free Fried Schnitzel is the solution! Using gluten free matzo meal, it’s crispy, flavorful, and safe for those with celiac disease or gluten sensitivities.
Ingredients (for 10 servings)
- 10 chicken breasts, sliced into cutlets
- 3 cups gluten free matzo meal
- 5 large eggs
- 2 tbsp water
- 1 1/2 tsp garlic powder
- 1 1/2 tsp onion powder
- 1 1/2 tsp paprika
- 1 1/2 tsp salt (or to taste)
- 3/4 tsp black pepper
- Oil for frying (vegetable or light olive oil)
Instructions:
1. Prepare the Chicken: Slice the chicken breasts into cutlets. You should have about 10 cutlets (one for each person). Pound the chicken to an even thickness (about ¼ inch) for even cooking.
2. Prepare the Coating: In one large bowl, whisk together the eggs and water. In another large bowl, combine the gluten-free matzo meal, garlic powder, onion powder, paprika, salt, and black pepper.
3. Bread the Chicken: Dip each chicken cutlet into the egg mixture, ensuring it is fully coated. Dredge each cutlet in the gluten free matzo meal, pressing gently to ensure the coating sticks. Place the breaded cutlets on a plate and let them sit for 5-10 minutes to set the coating.
4. Fry the Schnitzel: Heat about ½ inch of oil in a large skillet over medium-high heat. Fry the schnitzel in batches for 3-4 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F). Drain the schnitzel on paper towels or a wire rack.
5. Serve & Enjoy: Serve warm with lemon wedges and your favorite Passover-friendly sides.
This gluten free schnitzel is perfect for Passover or any meal! Crispy, tender, and easy to make, it’s a dish everyone can enjoy. Pair it with your favorite sides and enjoy. Chag Sameach! 💙🍽️
